A satisfying and hearty soup packed with protein. Add a side of veggies for extra color, rice or cornbread for extra carbs and/or avocado for extra fat.
1 medium onion, diced
1 jalapeno, diced
1 tablespoon each cumin & dried coriander
2 cooked chicken breasts, shredded (1 pound)
1 -15 oz can white northern or navy beans
1 small can green chiles
4 cups chicken stock
½ bunch cilantro, chopped
1 large lime or 2 small, juiced
Salt and pepper
Heat a large pot and spray with cooking spray.
Add onion and saute until soft, then add jalapenos and spices. Cook for another minute and add shredded chicken, beans, chiles and chicken stock.
Simmer until heated through, then add cilantro and lime juice.
Season to taste with salt and pepper.
