Chicken with Spinach and Artichokes

Ready in 30 minutes

Serves 4

This recipe is easy to whip up on a busy weeknight with pre-cooked chicken from meal prep or rotisserie chicken from the grocery store, frozen spinach and a can of artichoke hearts. Pair it with pasta, rice, quinoa, potatoes - your choice!


  • 8 ounces cooked chicken breast, diced or shredded

  • 1 tbsp olive oil

  • 10 oz block frozen spinach, thawed and drained

  • 14 oz can artichoke hearts, drained

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 cup chicken broth

  • 1 oz grated Parmesan cheese

  • Juice from 1/2 lemon


  1. Heat a 12 inch skillet over medium and add olive oil.

  2. To your pan, add spinach and artichoke hearts, mixing and breaking up the artichoke hearts until everything is combined. Cook for about 5 minutes.

  3. Add onion and garlic powders, chicken and chicken broth. Stir well and cook for another 5-7 minutes until heated through.

  4. Add lemon juice and stir. Season with salt and pepper to taste.

  5. Prior to serving, top with Parmesan. Divide evenly into four portions and serve with your carbohydrate of choice.
