Zucchini & Blueberry Baked Oatmeal

Ready in 45-60 minutes

Serves 4-6


Ingredients

  • 2 cups rolled oats

  • 1 ½ tsp ground cinnamon

  • ¼ tsp cardamom (optional)

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup milk or non-dairy alternative

  • ½ cup Greek yogurt

  • 2 eggs, beaten

  • ⅓ cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup shredded zucchini

  • 1 cup blueberries

Preparation

  1. Heat your oven to 375 degrees. Spray an 8x8 baking pan with cooking spray.

  2. Combine oats, spices, baking powder and salt in a large bowl. Stir to combine.

  3. Add milk, yogurt, beaten eggs, maple syrup and vanilla extract. Stir well, then add in zucchini and blueberries.

  4. Pour into the prepared baking pan. Bake for 45 minutes. Let cool slightly before serving.


Serving suggestions: top with Greek yogurt and additional fruit as desired.
