A lot of versatility in this recipe to swap out the cheese and veggies! Try substituting goat cheese for the feta, or broccoli for the red pepper. Or use frozen veggies for even easier prep! Add toast or potatoes or oatmeal plus fruit on the side for a full meal.
Ingredients
4 whole eggs
1.5 cups egg whites
2 cups chopped spinach
0.5 cups chopped red pepper
½ teaspoon salt
1 teaspoon pepper
2 oz feta
Preparation
Heat oven to 350 degrees F and spray a 2 quart baking dish well with cooking spray.
In a medium bowl, whisk whole eggs, then add egg whites, salt and pepper. Whisk until well combined.
Add red pepper and spinach and stir well.
Pour into the prepared baking dish and bake in a heated oven for 25-30 minutes or until eggs are set.
