Blueberry muffins made with higher protein baking mix! Double up your batch and freeze for future breakfasts or snacks. I like to have these on hand for pre and post workouts, an easy snack, and perfect for a night cap when you want something sweet! Enjoy hot or cold - they are great both ways :)

Nutrition per muffin:

Protein: 5 grams

Carbohydrate: 16 grams

Fat: 1 grams


Ingredients

  • 2 cups Kodiak Cakes mix or other higher protein pancake/baking mix

  • 2 cups water (can substitute milk if desired - this can add more protein!)

  • 1 teaspoon vanilla extract

  • ¼ cup maple syrup (can sub for another sweetener).

  • ¾ cup blueberries (can substitute any berry; fresh or frozen)


Preparation

  1. Heat oven to 350 degrees. Prepare a muffin tin pan with liners or spray with cooking spray.

  2. Add mix, water or milk, vanilla and maple syrup to a medium bowl and stir well to combine.

  3. Fold in blueberries and pour evenly into muffin tins.

  4. Bake for 15 minutes or until a toothpick inserted comes out clean.

  5. Enjoy!
